Manages the Perry Place kitchen under the direction of the Assistant Director to ensure high quality food production with recipe development, product specification, menu planning, budgeting, preparation, and presentation. Develop and maintain recipes and menus for self-branded concepts: Urban Market, Deli, Mediterranean, Diner, Cafe/Bakery, Smokehouse, Italian and implements the Asian cuisine inspired national brand concept. A working Executive Chef, which provides leadership and daily supervision of production staff and ensures continuous, up-to-date, and proactive training for employees. Ensures high quality food production for day-to-day operations by sampling and batch cooking. Maintains a high level of customer satisfaction by being responsive to customer needs, executing daily production, and working with the team to create exciting menu offerings and host special events. Mentors and prepares staff for advancement opportunities. Ensures a clean, safe and sanitary work environment for employees and customers.
Associates or bachelor’s degree in culinary arts or related field and/or related experience. Demonstrated knowledge of culinary technique and style for recipe development, menu planning and development, budget labor and food plan, food ordering, preparation, and presentation. Previous experience in supervising kitchen personnel.
Preference given to applicants with high end dining or higher volume campus dining experience. Preference given to applicants with American Culinary Federation certification (or equivalent) for Certified Executive Chef (CEC) or higher or able to be obtained within two years of employment. Knowledge and experience in health department regulations, OSHA, HACCP, ServSafe, employment law, and other applicable laws and regulations for compliance with state and federal policies and procedures. Demonstrated knowledge of computers with Windows, Microsoft Office including Word, Excel, Outlook, FoodPro or comparable food production software, and automated payroll system (such as Banner).
Salary $68,000/year and commensurate with experience
The successful candidate will be required to have a criminal conviction check.
