Junior Sous Chef, Dinner by Heston Blumenthal

 

Dinner by Heston Blumenthal, the two Michelin starred, award winning and internationally recognised restaurant located at the iconic Mandarin Oriental Hyde Park, London, is seeking an experienced Junior Sous Chef.  

 

This role will require the successful candidate to work with the senior team to ensure excellent quality throughout the offerings at Dinner. You will need to be able to communicate effectively, lead the smooth running of the kitchen operation and support the Head Chef with menu engineering, cost control and product development.

 

Key Responsibilities

  • Oversee and manage the smooth running of the day-to-day operations in the kitchen 
  • Strive to deliver the highest quality of food and service 
  • Supervise all product preparation and presentation 
  • Plan production to facilitate daily requirements, ensuring sufficient stock levels 
  • Develop and produce appropriate menu offerings aligned with the restaurant concept
  • Liaise with operations manager to ensure adequate quality of deliveries 
  • Carry out requisitioning and ordering to ensure appropriate cost control 
  • Deliver daily team briefings 
  • Demonstrate excellent organisational skills and time management
  • Maintain health, hygiene and safety standards
  • Attend and conduct trainings to further develop yourself and others
  • Conduct departmental orientation for all new team members 
  • Maintain appropriate standard of cleanliness including equipment and utensils

 

The role will require you to have

  • Minimum 6 years’ experience
  • Previous experience working at a similar style of restaurant
  • A creative approach with an unparallel eye for detail
  • The ability to work under pressure and prioritise effectively
  • A can-do attitude & the ability to work effectively as part of a team
  • Ability to maintain high and consistent food & hygiene standards at all times
  • Drive, initiative and passion for the restaurant industry
