Duties and Supporting Responsibilities
· Support company's philosophy and company culture using Pillars of Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
· Prepare annual budgets for culinary food cost and culinary labour cost.
· Manage food and labour costs.
· Be proactive to business levels to eensure proper quality, and to meet financial goals.
· Responsible for the recruitment, development, and retention of culinary talent to maintain the top level of excellence.
· Plan and submit a yearly CAPEX budget for the culinary department.
· Make sure that all the culinary division is staffed and equipped for success.
· Make sure all the Food and Beverage Safe and Sound program is followed and the proper documentation is completed for the yearly audit.
· Must remain current on food styles and trends
· Participate in local and national media and PR culinary events. Be an ambassador for the restaurants and the hotel.
· Must be able to work in fast paced, stressful environments.
