Dinner by Heston Blumenthal, the two Michelin starred, award winning and internationally recognised restaurant located at the iconic Mandarin Oriental Hyde Park, London, is seeking an experienced Pastry Sous Chef.
This role will require the successful candidate to maintain incredibly high standards, displaying high levels of skill, creativity and attention to detail. You will oversee the direction of the Dinner by Heston pastry team, working closely and reporting directly to the Pastry Head Chef. You shall be required to have an extensive understanding and skill in a range of classic and modern pastry techniques.
Key Responsibilities
- Oversee the smooth running of the day-to-day operations in the kitchen, supervising and co-ordinating all preparation and presentation
- Plan production to facilitate daily requirements and ensure sufficient stock levels
- Develop appropriate seasonal menu offerings in line with the concept of Dinner by Heston and in conjunction with the Head Pastry Chef
- Ensure appropriate cost control, oversee requisitioning and ordering
- Liaise with suppliers to ensure adequate quality of deliveries
- Maintain health, hygiene and safety standards
- Co-ordinate rotas with Head Pastry Chef
- Train and develop the Pastry team
- Maintain appropriate standard of cleanliness including equipment and utensils
The role will require you to have
- Minimum 5 years pastry experience
- Previous experience working at a similar style operation; managing very high standards and volume
- Able to inspire and lead a team
- A creative approach with unparalleled eye for detail
- The ability to work under pressure and prioritise effectively
- A can-do attitude & the ability to work effectively as part of a team
- Ability to maintain high and consistent food & hygiene standards at all times
- Drive, initiative and passion for the restaurant industry
