Job Duties
A. Formulates production data for all service areas.
• Follows infection control procedures (hand washing, hair net and gloves).
• Read and follow menu and generate daily tally sheets for all production areas.
• Generate tray tickets and cross check with menus. Correct as needed.
• Correct tally sheets and distributes to production areas.
• Communicates with production staff.
B. Supervises Diet Kitchen and directs the department in the absence of upper management.
• Follows infection control procedures (hand washing, hair net and gloves).
• Evaluate daily staffing patterns and make adjustments in work areas to assure coverage in all areas.
• Calls in additional staff and reassign when indicated.
• Assign personnel to serve on tray line, per policy.
• Supervises tray line for accuracy and timeliness.
• Monitors tray line service to assure delivery according to designated times in policy.
• Organizes accurate tray line temperature audits 10 times a month.
• Oversees nourishment production and delivery.
• Ongoing communication with nursing units.
• Answers questions, plans workflow, intervenes when indicated to assure timely food service delivery.
• Will contact security or storeroom for missing food items as requested by production staff.
• Scheduling personnel to assure adequate manpower.
• Monitor’s cooks performance to assure timely delivery, palatable taste and appearance and clinical compliance.
• Monitors, updates and orders paper supplies on a weekly basis.
• Serves as back-up for the daily tally of revenue and reconciliation of the cash drawer.
C. CBORD Management.
• Receives and accurately maintains patient nutrition profiles consisting of admission data, diet changes, food preferences, nourishments and snack requests.
• Communicates changes to diet kitchen personnel.
D. Supervises Sanitation Process.
• Follows infection control procedures (hand washing, hair net and gloves)
• Oversees dish room operation so that sanitation standards are met and policies are followed.
• Oversees trash removal and recycling activities, per policy.
• Oversees sanitation tasks as outlined in daily task assignment sheets and cleaning schedules, per policy.
• Accurately records refrigeration/freezer temperatures, per policy.
E. Trains employees.
• Follows infection control procedures (hand washing, hair net and gloves).
• Works one on one with new employees by orienting them to departmental policy and procedures, evaluating and assessing employee's knowledge and competency in completing task assignments.
F. Performance Management and Continuing Education. • Expectations are clear, well communicated and relate to the goals and objective of the department.
• Staff receives frequent, constructive feedback, including interim evaluations as appropriate.
• Staff has the necessary knowledge, skills and abilities to accomplish goals.
• The requirements of the performance planning and evaluation system are met and evaluations are completed by established deadlines with proper documentation.
• Performance issues are reviewed and communicated to assure a safe and healthy workplace.
• Attends required in-services.
• Will attend three hours of management training annually.
Minimum Qualifications
• Knowledge of food service management, therapeutic diets, sanitation standards and employee supervision.
Additional Considerations
Previous experience in hospital or healthcare setting preferred.
