Position Overview

UNT Dining Services is hiring a Senior Food Service Manager for Clark Bakery, a key role responsible for overseeing high-volume food production, staff supervision, and service efficiency. Reporting to the Executive Pastry Chef, this position ensures safe food handling, quality control, and a positive guest experience.

The manager supports daily operations including donut production, catering fulfillment, packaging, ware washing, and compliance with Texas Food Establishment Rules. This role shares supervision of up to 150 student workers and 10 full-time staff, and contributes to forecasting, ordering, and inventory management.

This position is essential to sustaining operations and delivering high-quality service to the UNT community.

Minimum Qualifications

Bachelor's degree in related field and three years of experience in food service management; or any equivalent combination of education, training, or experience.

Knowledge, Skills and Abilities

Extensive knowledge of dining, retail, and/or catering service operations. Thorough knowledge of the principles and practices of dietetics management knowledge and leadership skills related to business operations including planning, budgeting, organizing, controlling, and evaluating. Ability to analyze and solve problems, and make the necessary decisions on personnel, food preparation or food handling problems that may develop. Knowledge of cost and quality control techniques. Demonstrates good leadership skills and judgment. Skill in training, supervising, and evaluating the work of subordinates. Ability to develop and present formal and informal training and development programs. Knowledge of safety and security precautions appropriate to work performed. Superior attention to detail to ensure that high profile catering events or special events are executed to meet the departments high quality standards.

Preferred Qualifications

Strong experience in food service management, preferably in high-volume or institutional settings (e.g., college/university, healthcare, or large-scale catering)

Proven experience in supervising diverse teams, including full-time and student or part-time staff

Strong knowledge of commercial bakery operations, pastry production, or large-scale food production

Required License/Registration/Certifications

Must be Food Safe Certified or able to obtain certification within 6 months.

Job Duties:

  • Manage and coordinate high-volume bakery operations within Dining Services, including donut production, food preparation, packaging, and ware washing. Ensure compliance with quality standards and Texas Food Establishment Rules for food safety, sanitation, and cleanliness. Oversee food quality, customer service, and overall area management, applying strong knowledge of dietetics management and demonstrated leadership in planning, budgeting, organizing, and evaluating operational processes. 
  • Serve as the primary expeditor for Verde Catering baked goods, ensuring timely and accurate order fulfillment. Drive operational efficiency by streamlining workflows, supervising production schedules, and maintaining a clean and organized work environment that supports consistent, high-quality output. 
  • Exhibits strong leadership abilities and sound judgment. Proficient in training, supervising, and assessing the performance of team members. Capable of creating and delivering both formal and informal training and development programs. Knowledgeable in food safety practices related to the tasks at hand. 
  • Ensures adherence to University policies, health codes, and safety standards by regularly reviewing practices for compliance. Oversees kitchen operations to maintain strict adherence to HACCP and SOP processes at all times
