Department Summary
The Department of Personalized Health and Well-Being is filling this gap by bringing together an interprofessional team to develop innovative educational programs and research endeavors that focus on merging evidence-based lifestyle medicine with National Board for Health and Wellness Coaches (NBHWC) coaching competencies. Our graduates will be equipped with the knowledge and clinical skills to collaborate effectively within interdisciplinary healthcare teams and to integrate behavior change theories into the delivery of medical nutrition therapy, preparing them to lead in advancing patient-centered, whole-person care.

Position Overview
This adjunct faculty position plays a critical role in the development of 2–3 graduate-level clinical nutrition courses designed to prepare students for evidence-based practice within the U.S. healthcare system. The selected faculty member will lead the design, development, and refinement of online course content, ensuring alignment with program learning outcomes, accreditation requirements, institutional standards, and current best practices in clinical nutrition and healthcare delivery.
Courses will be developed for online delivery and should incorporate an interprofessional perspective, emphasizing the application of clinical nutrition across healthcare, community, and applied practice settings. The adjunct faculty member will be responsible for creating comprehensive course materials, which may include recorded lectures, readings, case studies, applied learning activities, assignments, and assessments that support competency-based outcomes. Collaboration with program leadership, curriculum committees, and relevant stakeholders will be required to ensure consistency, rigor, and alignment with program goals. This position is focused exclusively on course development and does not include teaching responsibilities. As part of the role, the adjunct faculty member will be required to complete any university-mandated training related to course development, learning management systems, accessibility, or instructional design. Following initial course development, the faculty member will participate in the institutional review and approval process, which may include responding to feedback, making revisions, and refining course content prior to final approval and delivery.
This is a remote adjunct position with a flexible schedule, structured around established development timelines and approval milestones. There are no on-campus or travel requirements. Time commitment will vary based on the scope of course development and required revisions. The adjunct faculty member will be expected to attend program or curriculum meetings as needed during the development and approval phases to support collaboration, alignment, and timely completion of deliverables.

Minimum Qualifications
- Master’s degree in nutrition or a closely related field.
- Credentialed as a Registered Dietitian Nutritionist.
- Minimum two years of professional experience as a Registered Dietitian Nutritionist.
- Experience teaching nutrition and dietetic courses or precepting dietetic interns.
- Commitment to the core Values and Behaviors of the UNT System.

Knowledge, Skills and Abilities
- Knowledge of medical nutrition therapies, evidence-based dietetics practice, and current trends and practices in clinical nutrition.
- Experience developing and delivering engaging online and in-person course content.
- Experience mentoring and advising students on career development, research, and professional growth.
- Proficiency with educational technology and learning management systems for course delivery and student engagement.
- Excellent communication and interpersonal skills to foster collaboration with faculty, students, and community partners.
- Strong organizational and time management skills.

- Doctorate degree in nutrition or closely related field.
- Experience in clinical nutrition or functional nutrition.
- Online teaching experience.
- Teaching experience in an ACEND accredited dietetic program.
- Experience in ACEND competency assessment.
- Experience with ACEND accreditation processes.
