ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback.
It is an exciting time to come on board as we have recently mobilised 4 x camps in Central Queensland and as a result we are seeking an experienced Head Chef to work at Capcoal Village in Middlemount serving approximately 800-850 residents.
8 days on, 6 days off with flights, accommodation and meals included.
The Position
- Work collaboratively with a team of Chefs and Kitchen Hands
- Buffet style bulk cooking for Breakfast and Dinner
- Ensure OH&S compliance, adhering to safe work practices and food handling procedures
- Ensure all catering controls are in place, and wastage is kept to a minimum
- Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards
- Managing catering team performance and employee development
The Person
- Minimum Cert III in Commercial Cookery
- Experience within bulk catering environments
- Excellent knowledge of all kitchen procedures and operations
- Experience in menu writing, rostering and cost control
- Experience with hygienic work practices and appropriate HACCP guidelines
