THE POSITION:

• Oversee the kitchen at a premier ski resort, ensuring smooth, efficient operations year-round
• Stock control and budget management, including minimising food wastage
• Develop seasonal menus for fine dining, banquets, canapés, and functions, tailored to the alpine setting
• Actively maintain a high standard of food safety, allergen awareness, and OHS
• Maintain the highest standards of food quality and presentation
• Build and maintain relationships with clients and other key stakeholders

THE PERSON:

• Minimum Cert. III Commercial Cookery
• Proven experience in high-end kitchen operations, with a focus on quality and efficiency
• On the cutting edge of culinary trends and cooking techniques, with an eye for detail and presentation
• You have a passion for fresh and sustainably sourced local ingredients
• Be flexible in delivering menus according to dietary requirements
• Solid understanding of allergen management, food safety and infection control
