As the Head Chef at St Andrews Beach Brewery at Melbourne Park, you will be leading the culinary team to deliver high-quality modern Australian food with a focus on fresh produce and presentation, contributing to our reputation for culinary excellence. This modern kitchen has all the bells and whistles, providing the perfect venue where great beer meets great food !
St Andrews Beach Brewery is situated on a 92 acre property formally known as ‘Markdel’. Our Story dates back to the early 2000’s, when the Co-founder Andrew Purchase built the racetrack on the property for the royal family of Australian horse racing – the Freedman Brothers. In 2015, Andrew and Michael Freedman saw an opportunity that was too good to miss. With the infrastructure in place and their story like no other, Andrew, Michael and their passionate team of co-owners set about turning the former stables into a truly unique brewery. Nearly a year into their partnership with Levy & Melbourne Park, this is a fantastic time to join the team and contribute to it's continued success on Melbourne's iconic sports and entertainment precinct.
From the stadium to the head table, Levy leverages unbridled creativity, custom strategies, impeccable service, and true love for great food to create unforgettable experiences. With a love for trying new flavours and techniques, a sustainable mindset and a talented network of passionate foodies, we are in the business of serving great food.
The Position:
- Oversee the efficient running of all aspects of the kitchen with a sharp focus on food quality, costs, and labour control.
- Develop seasonal menus showcasing local and regional produce, while complimenting St Andrews Beach beers and ciders.
- Lead and mentor a diverse and motivated kitchen team, that facilitates learning and creativity.
- Ensure cost-effective kitchen management with quality control, inventory monitoring, allergen awareness and strict hygiene and food safety procedures.
The Person
- Minimum 3 Years experience as a Head Chef in a high-volume kitchen environment
- Cert IV Commercial Cookery + Food Safety Supervisor Certification
- An exceptional communicator with Strong stakeholder engagement and the ability to lead and mentor a large team, cultivating a positive workplace.
- Ability to oversee and execute innovative, modern, trend forward menus.
- Understanding of financial budgets, food, and labour costs
- Values that match our own when it comes to respect, inclusivity, sustainability, and everything else that is good for the world.
- A high level of commercial acumen & Proficiency in applications of Microsoft 365
