THE POSITION

  • Plan, supervise, monitor and evaluate high-end food production and premium menu-based catering
  • Lead menu development and culinary direction for Levy’s ultra-premium spaces during the Australian Open
  • Work alongside British Chef Simon Rogan to curate a bespoke three-course menu at Club 1905, embodying his award-winning Michelin-starred Farm-to-Plate philosophy
  • Collaborate with internationally recognized Chef Peter Gilmore to define and execute the unique culinary style of the Champions Rooftop
  • Responsible for stock control, budgets, cost management, staff mentoring and training
  • Assist and oversee the preparation, cooking, and presentation of all elite culinary offerings
  • Actively maintain a complete awareness and desire for modern culinary innovation, technique, and sustainability
  • Ensuring accurate implementation of dietary requirements and critical allergy awareness controls
  • Maintaining a high standard of food hygiene, safety, compliance, and cleanliness

THE PERSON

  • Hold Current Australian Work Rights
  • Minimum Certificate III in Commercial Cookery
  • Proven experience in fine dining, premium events, or luxury culinary environments
  •  Demonstrated experience in leading, mentoring, and developing teams under high-pressure event timelines
  •  Deeply passionate about contemporary food trends, luxury styling, and sustainable farm-to-plate philosophies
  • Comprehensive knowledge and experience in HACCP, food safety guidelines, and operational hygiene standards
