ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high-quality meals that support the wellbeing of Australian Defence Force personnel.

We are seeking motivated and reliable Cooks and Chefs to join our team at Blamey Barracks, Kapooka. These full-time opportunities are ideal for candidates with commercial kitchen or catering experience looking for stable employment and long-term career growth within a supportive team environment.

KEY RESPONSIBILITIES

• Prepare high-quality meals in a bulk cooking environment
• Maintain food safety, hygiene and HACCP standards
• Support stock control, deliveries and kitchen operations
• Ensure food quality, presentation and portion control
• Work collaboratively as part of a professional kitchen team
• Support meal services during busy operational periods

SKILLS AND EXPERIENCE

For Chef Applicants

• Certificate III in Commercial Cookery
• Experience in commercial kitchens, catering or bulk food production
• Strong knowledge of HACCP, food safety and allergen management

For Cook Applicants

• Relevant cooking experience in a commercial kitchen or catering environment
• Understanding of food safety and hygiene practices
• Ability to work efficiently in a fast-paced kitchen environment

For All Applicants

• Strong attention to detail and organisational skills
• Reliable, team-focused and committed to quality service
• Ability to obtain and maintain a National Police Check
