THE POSITIONS

Sous Chef

  • Assist in managing daily production kitchen operations.
  • Supervise large teams of chefs and cooks.
  • Ensure all mise en place and production schedules are completed on time.
  • Monitor food quality, consistency and presentation standards; maintaining HACCP and food safety compliance.
  • Support stock control, ordering and waste management
  • During the Australian Open - Coordinate large batch preparation of food for multiple tournament spaces.
  • Ability to complete administrative tasks and comfortable using various kitchen management systems, or willingness to learn

Sushi Sous Chef

  • Prepare high-quality sushi and Japanese inspired dishes
  • Assist the Head and Executive chefs in managing daily kitchen operations
  • Supervise and mentor kitchen staff
  • Maintain exceptional food safety and hygiene standards
  • Support large scale event catering an exceptionally fast paced environment
  • Ensure consistency, quality and presentation across all service periods
  • Ability to complete administrative tasks and comfortable using various kitchen management systems, or willingness to learn

THE PERSON

  • Previous experience as a Sous Chef in high volume catering, production kitchens or premium dining environments.
  • For Sushi Sous Chef - Strong knife skills and expertise in Japanese cuisine
  • Hold Current Australian Work Rights
  • Minimum Certificate III in Commercial Cookery
  • Strong leadership and communication skills, with the ability to liaise with various stakeholders.
  • Experience in rostering and managing large teams and multiple venues at once
  • Flexibility to work across weekdays, weekends and evenings - particularly during the Australian Open tournament.
