Position Summary
Instructional responsibilities include teaching fsc 231 Cereals Processing (2 credits) for the Institute of Agricultural Technology during fall 2021 semester.
Course will be delivered in Muskegon, MI at Muskegon Community College.
FSC 231 contact hours will be 1 hour lecture, recitation, or discussion and 2 hours lab per week in a hybrid format, (3 hours of total contact time per week) for 14 weeks of instruction.
Course description:
- Students will identify cereal classification and composition.
- Students will practice cereal production methods.
- Students will design and implement a food processing experiment and collect data; they will create a laboratory report based on collected data.
- Students will experience working with cereal processing equipment and practice food safety and sanitation protocols.
Outline of Major Topics:
- Cereal crops grown in Michigan
- Food reactions that influence processing
- Cereal milling
- Cereal processing methods
- Microbiological concerns
Position is planned to recur every Fall Semester

Minimum Requirements
- Three years of relevant industry experience in Cereals Processing
- Experience operating and training on Food Processing equipment
- Knowledge and skills related to Food Processing
- Excellent teaching, oral and written communication skills
Desired Qualifications
- B.S. in Biology, Chemistry, Food Safety, Food Processing, Food Science or related fields
- Masters degree in Food Processing or related fields
- Experience in development and assessment of learning outcomes
- Teaching experience and a passion for teaching
