As Pastry Chef, you will assist the Executive Pastry Chef, lead the Pastry section and be responsible for overseeing pastry production in aspects of operations, administration and finance, menu development, and team management. 

Key Responsibilities:

  • Lead and manage the pastry team; foster a culture of learning to enhance skills, providing training and opportunities for growth
  • Collaborate and work closely with the Pastry Chef and the rest of the culinary team to ensure a cohesive dining experience
  • Create and develop innovative menus that align with the overall culinary concept and goals
  • Maintain strict standards of quality, consistency, and presentation of all pastry items, while conducting regular tastings and inspections
  • Monitor food costs, inventory levels, and procurement processes to optimize efficiency, minimize waste, and maximize profitability
  • Ensure compliance with health and safety regulations, sanitation standards, food hygiene practices, and audit requirements and maintain a clean and organized kitchen environment
  • Establish and cultivate positive relationships with vendors to source high-quality ingredients and to optimize cost efficiency
  • Assist the Executive Pastry Chef to plan menus, prices and promotional events for the Banquet and all restaurants in order to maximize revenue generating opportunities in line with market demands.
  • Assist the Executive Pastry Chef to review menus in regard to popularity of dishes, food cost and seasonality with the respective Restaurant Manager and suggest new menu proposals to the Executive Chef.
  • Assist the Executive Pastry Chef to ensure the recipe costings for Pastry are up to date and in line with selling prices.
  • Ensure plating guides and standard setup guides are followed according to set dish description, cooking method and presentation image.
  • Ensure that all pastry items are prepared in the most authentic way as standards set by the Executive Pastry Chef.
  • Regularly inspect the quality of the ingredients and measure them for specific recipes.
  • Observe all aspects of the business forecasts and plan effectively to make most efficient arrangements for manpower, equipment and supplies accordingly.
  • To be updated with the latest food trends in the Food & Beverage industry to ensure that all Pastries are in line or ahead with international standards.
  • Oversee and follow through the food safety standards set by the Hotel, and by the local UAE Municipality rules and regulation.
  • Supervise the maintenance and cleanliness of the Kitchens and stewarding area at all times and support to carry out daily checks and monthly walk-throughs with the respective stewarding and engineering colleagues.
  • Ensure that all pastry items displays are food safe, creative, clean and with attention to detail as per set standards by the Executive Pastry Chef.  
  • Communicate rules & regulations to all colleagues by using the colleague handbook and any other appropriate documents.
  • Conduct counselling and disciplinary action as appropriate in accordance with Mandarin Oriental, Dubai procedures.
  • Conduct daily meetings with the team and provide a regular forum for two-way communication with the whole team.
  • Support Banquet if required for any events or outside catering events with manpower or with actual pastries dishes as requested.

Skills & Qualifications

  • High school and culinary school training.
  • PIC Level 3 or Dubai Municipality training certificate holder are preferred.
  • A minimum of 5-7 years’ pastry experience in a luxury hotel environment.
  • A minimum of total 7 years’ experience working in five-star luxury kitchens and restaurants is mandatory.
  • Hotel pre-opening experience in the UAE is preferable
  • With extensive knowledge of pastry techniques and trends, with a passion for creativity and innovation
  • Strong leadership and management skills, with the ability to inspire and motivate a diverse team of culinary professionals; with the ability to collaborate effectively with colleagues, vendors, and guests
  • Solid understanding of food cost control, inventory management, and procurement processes to drive profitability and operational efficiency
  • Ability to understand guest needs and expectations and to deliver superior guest service through own initiative and through driving and motivating his/her team accordingly.
  • Attention to details and the ability to organize and handle multiple tasks effectively
  • Mature and outgoing personality with excellent interpersonal skills and a great understanding of cultural sensitivities.
  • Ability to communicate clearly and to understand effective approaches to communicate with different individuals.
  • Excellent verbal and written in English is mandatory.
  • Basic knowledge of any other language is an advantage.
