Mandarin Oriental, Costa Navarino

Located on the southwest coast of the Peloponnese, one of the most unspoiled and breath-taking landscapes in the Mediterranean, and 45 minutes’ drive from Kalamata International Airport.

The beachfront resort is part of the sustainable resort destination of Costa Navarino, a well-established tourism destination which includes 3 other resorts. It comprises of 99 suites and villas, all with outdoor terraces and sea views, along with seven restaurants and bars.

Scope of Position:

The Chief Steward is responsible for the overall hotel stewarding operations and ensures that the assistant and all the stewards are delivering the necessary level of service. The Chief Steward is also responsible for the implantation HACCP and Health & Safety guidelines related to Food & Beverage from MOHG as well as local regulations.

Duties & Responsibilities:

  • Ensures that all designated action points from daily briefings or other operational meetings are being followed by the individuals concerned.
  • Takes responsibility of all operating equipment within the hotel
  • Inspects S&S files monthly to ensure proper procedures and updates are in place.
  • Maintains storage and condition of all operating equipment and the cleanliness and tidiness of the stores
  • Maintains the purchasing and repair of all equipment.
  • Maintains strategy for breakages and losses to the hotel’s operating equipment.
  • Implements HACCP with certification and follows up training for the F&B team.
  • Oversees special projects and assignments as assigned by the Executive Chef and/or the Director of Food & Beverages.
  • Oversees chemical expenditure and control of chemical purchasing.
  • Ensures that daily SOP Training takes place in order to meet Mandarin Oriental standards.
  • Is aware of, and complies with, safe working practices as laid down in Company H & S Manual, as applicable to the place of work. This will include awareness of any specific hazards at your workplace.
  • Successfully implements and controls effectively all related HACCP and Health & Safety guidelines related to Food & Beverage from MOHG as well as local codes.

Qualifications / Experience:

  • Minimum of 3 years’ experience in a similar position, preferable in luxury hotel/restaurant environment.
  • Have a minimum of 1-2 years’ experience in Back-of-House.
  • Management within a luxury hotel operation.
  • Pre-opening hotel experience preferred within Back-of-House Management.
  • Technical knowledge and job skills training including effective use of the provided materials.
  • Excellent Food and Beverage knowledge.
  • Must be proficient in all Microsoft Office, such as Word, Excel, PowerPoint, Microsoft Outlook, etc.
  • Fluency in English & Greek.
  • EU Passport is mandatory in order to work in Greece.
