Duties/essential functions may include, but not be limited to, the following:
Input and maintain accurate nutrition, ingredient, and allergen information in the menu management system that supports all campuses. Work closely with culinary and procurement teams to ensure up-to-date ingredient and recipe information.
Assist the Assistant Director, RD, in providing nutritional counseling to students with dietary restrictions, allergies, and special dietary needs.
Participate in student outreach efforts, including educational events, dining hall tours, and nutrition awareness programs (such as Future Flashes, Destination Kent State, and Kent Interhall Council).
Oversee maintenance and troubleshooting of campus digital menu boards, website integrations, and mobile applications displaying nutritional information. Work with integration partners , IT division and food service teams to resolve issues related to the displayed accuracy and functionality of nutrition-related technology.
Provide training and support to culinary staff on how to utilize digital nutrition display systems effectively.
Verify and audit nutritional data for accuracy and compliance with university and regulatory standards. Collaborate with culinary leadership to ensure compliance with food safety and allergen management best practices; this includes reviewing ingredient labels, may contains statements, and manufacturing protocols to ensure that menu and labeling is accurate.
Develop nutrition-related educational materials in partnership with centers across campus, including but not limited to: Employee Health and Wellness, Kent State of Well-Being, DeWeese Health Center, and the CARES Center.
Support campus-wide initiatives to promote balanced eating and food inclusiveness.
Support departmental initiatives related to sustainability, wellness, and accessibility.
Provide training of culinary staff on food and allergen safety.
Perform related duties as assigned.
