Lead Culinary Excellence in a Dynamic Environment


About the Role:

LagardèreAWPL is seeking a talented Head Chef to lead our culinary operations at Brisbane Airport. Reporting directly to the Executive Chef, you’ll oversee a diverse portfolio of outlets including cafés, restaurants, and production kitchens, ensuring every dish meets the highest standards of quality and consistency. Your role will be pivotal in creating exceptional dining experiences for travellers while driving operational efficiency and financial performance.

Key Responsibilities
✅ Lead, coach, and develop a kitchen team of approximately 10–15 staff to deliver high standards and foster a positive team culture.
✅ Ensure consistency and quality by preparing and presenting all dishes in line with menu specifications, brand standards, and planograms.
✅ Drive culinary innovation through menu design and development, ensuring offerings are creative, cost-effective, and aligned with customer expectations.
✅ Manage ordering, stock control, PO management, and monitor deliveries to ensure accuracy.
✅ Drive financial performance by optimising sales, controlling waste, monitoring margins, and supporting menu design and costings.
✅ Maintain compliance with all internal policies, food safety procedures, OHS standards, and airport security protocols.
✅ Build strong relationships with internal stakeholders, suppliers, and brand partners to support operational objectives.


About You
👨‍🍳 Proven experience as a Head Chef or senior culinary leader in a high-volume environment.
🏆 Strong leadership skills with experience in team development and workforce management.
📅 Excellent organisational, time management, and planning skills in a fast-paced environment.
⏱️ Skilled in menu design, recipe costing, purchasing, and waste management.
✅ Knowledge of food safety management systems, safe work practices, and airport security requirements.

 
Work Environment & Hours

🛂 As this role is based in a secure airport environment, successful applicants must obtain and maintain a valid ASIC (Aviation Security Identification Card).
🕒 Hours are scheduled to support operational needs and will include weekends and public holidays, offering a dynamic work environment where no two days are the same.
💪 Role requires standing for extended periods, manual handling, and operating under fast-paced service pressures.
