Purpose of Position

This exciting part-time benefited position plays a key role in advancing the Continuing Education Programs within the Nutrition Certification Programs. The individual in this role will oversee and expand existing continuing education offerings while identifying emerging trends and developing innovative, niche coursework in nutrition certification and credentialing. Responsibilities include designing new continuing education courses, securing continuing education credit approvals, and helping shape high-quality professional learning opportunities for nutrition professionals.

In addition, this position serves as an important point of support for students and faculty, providing exceptional customer service across all nutrition certification and continuing education programs. This is a unique opportunity to combine creativity, program development, and learner support in a collaborative and mission-driven environment.

Duties & Responsibilities

Facilitate the development of Continuing Education (CE) professional coursework and in-service training programs for foodservice professionals and other health care professionals.

  • Facilitate pre-planning, research, design, recruiting and preparation of continuing education coursework/programs
  • Determine break-even budgets for new CE courses to viability of projects
  • Collaborate with Program Coordinator and instructors to determine the needs for continuing education and direct new course development, niche program development and assist with the Nutrition and Foodservice Professional Training Program development
  • Determine and be ever diligent to on-going needs to update existing nutrition certificate programs, being ever watchful of changing industry needs and how UND can lead in current and emerging markets
  • Work directly with program coordinator, Instructors and Faculty to determine new course development delivery options
  • Manage contracts and contract negotiations for instructors, faculty, & UND colleges teaching nutrition certification continuing education courses
  • Work with directors and legal counsel to determine the most appropriate contract terms and conditions for course instructors
  • Recruit and train appropriate instructors for existing and new CE course development
  • Review and interpret national and state regulations regarding credentialing, licensing or certification for the health professionals we serve
  • Facilitate course set-up in the learning management system
  • Research and integrate the use of alternative course delivery methods (i.e. webinars, training, seminars, etc.), as appropriate
  • Work with marketing team and program coordinator to develop a website presence and marketing strategies for new courses, including outreach to new niche markets
  • Verify course timing component to determine if the average student time spent in each continuing education course is appropriate, prior to applying for continuing educational credits
  • Apply for and manage applicable continuing education credits through the appropriate channels, depending on professional discipline, gaining CE approval pre-launch
  • Research outside vendors to determine appropriateness of partnering to increase course offerings 

Assist with program operations and provide customer service support to students and faculty for continuing education courses and the Nutrition and Foodservice Professional Training Program. Optimize course delivery to ensure quality programming and continuous improvement.

  • Collaborate with program coordinator and instructors to support student engagement and learning
  • Review each online course for quality, consistency, errors and appropriate protocol for online delivery
  • Work with program coordinator, student records, data, finance, and marketing teams to establish the best procedures and protocol for the delivery of the courses to students
  • Monitor courses for student progress, broken links, and needed updates
  • Work closely with instructors to stay up to date on grading, reporting and student progression
  • Solicit and monitor evaluations to identify opportunities to facilitate course improvement
  • Work with data manager, finance, and student records teams to maintain efficient instructor payment processes
  • Work with faculty and students to resolve issues and provide support for student learning
  • Work with instructors and students to remedy their issues and answer questions about CE courses
  • Assist with recruitment and training of appropriate instructors for the Nutrition Certificates Programs
  • Participate in Advisory Board meetings and assist with reporting out and completion of annual report
  • Assist with the completion of ANFP Annual Program & University reporting, as needed
  • Complete the appropriate applications and annual reporting, by required due dates, to receive on-going course approval with appropriate credentialing/regulating bodies
  • Participate in ANFP committees/task forces, and attend conferences and national events to enhance professional development as appropriate and in balance with work responsibilities

Minimum Requirements

  • Bachelor’s Degree (Nutrition, Dietetics, Foodservice Management or related field)
  • Registered Dietitian Nutritionist (RDN) as credentialed by the Commission on Dietetic Registration
  • Experience working with the public and providing customer service
  • Experience with the planning and development of educational programs, course development using a learning management system, curriculum development, and development of in-service trainings
  • Computer proficiency in Word, Excel, PowerPoint, learning management system, internet and email
  • Online teaching experience
  • Ability to travel will be required
  • Successful completion of a Criminal History Background Check

  • Experience working with Certified Dietary Managers (CDM, CFPP)
  • Demonstrated experience in teaching
  • Demonstrated experience in attaining CEUs for training
  • Experience with market research and needs assessment
  • Experience working with Blackboard or other learning management systems and online learning
  • Experience developing and delivering continuing education programs
  • Experience with project management
  • Master’s Degree in Nutrition, Dietetics, Public Health, Foodservice Management, Education, or closely related field
