UNT Dining Services is home to Mean Greens Café, the nation’s first 100% vegan collegiate dining hall, and Kitchen West, Texas’ first and only university dining hall certified Free From™ the Big 8 food allergens and gluten. In 2021, UNT introduced Eagle Landing, the university’s first standalone dining hall, inspired by urban food halls and featuring seven distinct restaurant concepts—all available for a single Meal Plan swipe.

Position Overview

This position supports the supervision of daily production operations across multiple workstations, ensuring efficiency, quality, and timely completion of objectives. The role actively monitors production flow and reallocates personnel and resources as needed to address delays or deficiencies.

The position also assists in supervising the closing team, with responsibility for cleanliness, organization, and proper storage of materials and equipment. It ensures team members remain focused and motivated throughout the shift and conducts final walkthroughs to verify that all closing objectives and standards are met.

When required, this role supports late deliveries by safely loading delivery vehicles and completing deliveries in accordance with UNT safety protocols. Additionally, the position helps organize and stage product for the following day, including assembling orders and preparing materials for efficient next-day operations.

A key component of the role is identifying opportunities for improvement and initiating new processes to ensure the late team consistently completes its duties successfully and efficiently.

Minimum Qualifications

High school diploma/GED equivalent and some experience in institutional or commercial food preparation.

Knowledge, Skills and Abilities

Ability to follow detailed oral and written instructions; ability to direct and manage the work of others. Ability to work from written menus, standard recipes and oral instructions. Ability to maintain records and complete forms accurately. Ability to apply mathematical concepts to complete tasks (example: checking orders for quantity). Considerable knowledge of the materials, methods, and equipment used in preparing food on a large scale. Considerable knowledge of health hazards in food preparation and service, and knowledge of necessary precautionary measures. Knowledge of food values and menu planning. Ability to train personnel in the care and use of equipment and in standard practices and methods used in largescale food service and following up delegated assignments. Knowledge of safety and security precautions appropriate to work performed.

Job Duties

  • Production & Team Support Assist with supervising production across multiple stations by monitoring workflow, redirecting labor and resources as needed to address delays, and ensuring production goals are met efficiently. 
  • Closing Operations Oversight Support the supervision of the closing team by ensuring proper cleaning, organization, and storage of materials; maintaining team focus and motivation; and conducting final checks to confirm all closing tasks and standards are completed. 
  • Logistics, Deliveries & Process Improvement Prepare and stage products for the next day, including order assembly; complete late deliveries when required in compliance with UNT safety protocols; and initiate process improvements to enhance efficiency and successful completion of late-team responsibilities.
