We are looking for a Sous Chef Fine Dining to join the team at the new opening of Mandarin Oriental Mayfair, London.

Be part of the exclusive team hosting Mayfair’s newest and most exciting dining destination. As a Sous Chef Fine Dining at Mandarin Oriental you will play an integral part in facilitating an experience like London has never known. By working through Chef Akira Back’s world famous dishes and operational strategy, you will be part of the management team leading the best-known outlet kitchen brigade.

Sharpen your skills and learn invaluable new ones as you transcend hospitality in seamless fashion and lively interactions.

As a Sous Chef Fine Dining you will need to:

  • Be able to organize the team and workflow to execute the Akira Back’s standardized dishes according to the recipes and user guides in a high volume atmosphere for high profile guests.
  • Drive the team to maintain the highest level of productivity and efficiency in overall food preparation in DOSA Restaurant.
  • Be able to project and procure the adequate amount of products and prepare in timely manner.
  • Demonstrate the ultimate level of food safety, understanding HACCP principles, possess the highest personal hygiene and be able to train the team.
  • Menu engineering and creating user record and recipe card.
  • Lead and support the Junior team members.
